Steak and eggs with chimichurri

Why it works for iron

A weekend breakfast with real iron in it. Steak brings heme iron, which needs no help, and the parsley and tomato let the egg's plant iron in as well.

Heme iron, from meat and fish, gets in on its own and helps the plant iron beside it in too.

Ingredients

  • 120 g beef steak
  • 1 egg
  • 1 tomato
  • A bunch of parsley
  • 1 garlic clove, chilli flakes
  • 1 tbsp olive oil, 1 tsp red wine vinegar

Method

  1. 1

Chop the parsley and garlic fine and mix with the oil, vinegar and chilli. That is the chimichurri.

  2. 2

Sear the steak 2–3 minutes a side and let it rest. Fry the egg in the same pan.

  3. 3

Slice the steak and serve with the egg, sliced tomato and plenty of chimichurri.

Drink water with it. Have coffee or tea 1 hour before or 2 hours after, as they hold plant iron back.
