Sweet potato and beef hash with a fried egg

Why it works for iron

Heme iron from beef gets in on its own, and it helps the plant iron beside it in too. Sweet potato and pepper add carotenoids and vitamin C, so the whole pan works for you before the day starts.

Heme iron, from meat and fish, gets in on its own and helps the plant iron beside it in too.

Ingredients

  • 100 g beef mince
  • 1 medium sweet potato
  • 1 red bell pepper
  • 1 egg
  • Parsley, 1 tsp olive oil

Method

  1. 1

Cut the sweet potato into 1 cm cubes and fry in the oil under a lid for 10 minutes, turning now and then.

  2. 2

Push it to one side, brown the mince, then add the diced pepper for 3 minutes.

  3. 3

Fry the egg on top and finish with parsley.

Drink water with it. Have coffee or tea 1 hour before or 2 hours after, as they hold plant iron back.

Iron is an estimate from food tables for the amounts in this recipe, not a lab result. Your body takes in a share of it, and a larger share when your stores are low.
