Eggs with spinach, sun-dried tomatoes and pumpkin seeds

Why it works for iron

Spinach and pumpkin seeds carry most of the iron here, and sun-dried tomatoes bring the vitamin C that plant iron needs to get in. It is quick enough for a weekday morning.

Plant iron needs a key to get in. On this plate it has one.

Ingredients

  • 2 eggs
  • 100 g spinach
  • 3 sun-dried tomatoes
  • 2 tbsp pumpkin seeds

Method

  1. 1

Toast the pumpkin seeds in a dry pan for 2 minutes and set aside.

  2. 2

Wilt the spinach for 2 minutes and squeeze out the water. Pat the tomatoes dry and chop them.

  3. 3

Scramble the eggs with the spinach and tomatoes. Scatter the seeds on top.

Drink water with it. Have coffee or tea 1 hour before or 2 hours after, as they hold plant iron back.
