Shakshuka with white beans and parsley

Why it works for iron

Shakshuka already cooks eggs in tomato and pepper, two of the best keys for plant iron. A handful of small white beans makes it a real iron breakfast, with no meat at all.

Plant iron needs a key to get in. On this plate it has one.

Ingredients

  • 2 eggs
  • 2 ripe tomatoes, or 250 g passata
  • 1 red bell pepper
  • 100 g cooked small white beans
  • A small bunch of parsley
  • 1 tsp olive oil, cumin, paprika

Method

  1. 1

Soften the pepper strips in the oil for 5 minutes.

  2. 2

Add the chopped tomatoes, the beans and the spices. Simmer 5 minutes, until thick.

  3. 3

Make two hollows, crack in the eggs, cover and cook 5–6 minutes, until the whites set.

  4. 4

Scatter with parsley. Skip the feta: it is dairy.

Drink water with it. Have coffee or tea 1 hour before or 2 hours after, as they hold plant iron back.
