Why it works for iron
Soaked red lentils blend straight into a batter, with no flour needed. Parsley, lemon and roasted pepper bring the vitamin C, and a batch keeps for the next morning.

Plant iron needs a key to get in. On this plate it has one.
Ingredients
- 60 g dry red lentils, soaked for 2 hours
- 1 egg
- 1 red bell pepper
- A bunch of parsley
- ½ lemon, 2 tsp olive oil
- Cumin, salt
Method
- 1
Drain the lentils and blend them with the egg, cumin and salt into a thick batter.
- 2
Fry spoonfuls in a little oil, 2–3 minutes a side. Fry the pepper strips alongside until soft.
- 3
Blend the parsley with the oil and lemon juice and spoon it over the fritters.
Drink water with it. Have coffee or tea 1 hour before or 2 hours after, as they hold plant iron back.
