Why it works for iron
Quinoa carries more iron than oats, and pumpkin seeds add more. Pumpkin brings carotenoids and sea buckthorn a large dose of vitamin C, so the plant iron has two keys.

Plant iron needs a key to get in. On this plate it has one.
Ingredients
- 50 g dry quinoa, rinsed
- 100 g grated pumpkin
- 3 tbsp coconut milk
- 2 tbsp pumpkin seeds
- 2 tbsp sea buckthorn berries
- Cinnamon, a pinch of salt
Method
- 1
Simmer the quinoa in 200 mL water with the cinnamon and salt for 10 minutes.
- 2
Stir in the pumpkin and coconut milk and cook 5 minutes more, until creamy.
- 3
Top with the seeds and sea buckthorn. Made with water and coconut, not milk, so nothing holds the iron back.
Drink water with it. Have coffee or tea 1 hour before or 2 hours after, as they hold plant iron back.
