Why it works for iron
Lamb mince carries heme iron, and the big handful of parsley and mint adds plant iron with its own vitamin C. Pomegranate and lemon finish it.

Heme iron, from meat and fish, gets in on its own and helps the plant iron beside it in too.
Ingredients
- 150 g lamb mince
- 1 tomato
- A big bunch of parsley and mint
- 2 tbsp pomegranate seeds
- ½ lemon, 1 tsp olive oil
- Grated onion, cumin, allspice, salt
Method
- 1
Mix the lamb with the onion and spices and shape into 4 small sausages, on skewers or by hand.
- 2
Grill or fry them 8–10 minutes, turning, until browned all over.
- 3
Chop the tomato and herbs, dress with lemon and oil and top with the pomegranate. Skip the yogurt sauce: it is dairy.
Drink water with it. Have coffee or tea 1 hour before or 2 hours after, as they hold plant iron back.
