Beef and red bean chilli with avocado and lime

Why it works for iron

Chilli is one of the easiest iron meals there is. Beef brings heme iron, kidney beans add plant iron, and tomato, pepper and lime make sure it gets in. Leave out the sour cream and cheese: dairy holds iron back.

Plant iron needs a key to get in. On this plate it has one.

Ingredients

  • 125 g beef mince
  • 120 g cooked red kidney beans
  • 2 tbsp tomato paste
  • 1 tomato
  • 1 red bell pepper
  • ¼ avocado, 1 lime
  • Garlic, cumin, paprika, chilli

Method

  1. 1

Brown the mince with the garlic and spices.

  2. 2

Add the diced pepper and tomato, the paste, the beans and a splash of water. Simmer 15 minutes.

  3. 3

Serve with avocado and plenty of lime. Leave out the sour cream and cheese.

Drink water with it. Have coffee or tea 1 hour before or 2 hours after, as they hold plant iron back.
