Beef meatball soup with white beans

Why it works for iron

Beef and beans together: the heme iron in the meatballs helps the beans' plant iron in, and pepper and carrot add the keys. Make a pot and lunch is sorted for days.

Plant iron needs a key to get in. On this plate it has one.

Ingredients

  • 125 g beef mince
  • 300 mL bone broth
  • 100 g cooked small white beans
  • 1 red bell pepper
  • 1 carrot
  • Parsley, salt, black pepper

Method

  1. 1

Season the mince and roll it into small balls. They freeze well, so make a batch.

  2. 2

Bring the broth to a simmer, add the meatballs and the sliced carrot and cook 10 minutes.

  3. 3

Add the beans and the diced pepper for 5 minutes more. Finish with parsley.

Drink water with it. Have coffee or tea 1 hour before or 2 hours after, as they hold plant iron back.
