Why it works for iron
Lentils are one of the best plant sources of iron, and this salad puts four keys around them: roasted pepper, sun-dried tomato, parsley and lemon. It keeps, so it travels to work.

Plant iron needs a key to get in. On this plate it has one.
Ingredients
- 150 g cooked green or black lentils
- 1 red bell pepper
- 3 sun-dried tomatoes
- A bunch of parsley
- A handful of rocket
- 1 lemon, 2 tsp olive oil
Method
- 1
Roast the pepper at 200 °C for 20 minutes, or use one from a jar.
- 2
Chop the pepper, the sun-dried tomatoes and the parsley.
- 3
Toss with the lentils, rocket, lemon juice and oil. It keeps in a lunch box until the next day.
Drink water with it. Have coffee or tea 1 hour before or 2 hours after, as they hold plant iron back.
