Coconut yogurt with blackcurrants and toasted seeds

Why it works for iron

Dairy yogurt brings calcium, which holds iron back, so this bowl uses coconut yogurt instead. Pumpkin seeds carry the iron, and blackcurrants are among the richest sources of vitamin C you can buy frozen.

Plant iron needs a key to get in. On this plate it has one.

Ingredients

  • 150 g plain coconut yogurt
  • 2 tbsp pumpkin seeds
  • 1 tbsp cashews
  • A handful of blackcurrants, fresh or thawed

Method

  1. 1

Toast the pumpkin seeds and cashews in a dry pan for 2–3 minutes and chop them roughly.

  2. 2

Spoon the yogurt into a bowl and top with the blackcurrants and seeds.

  3. 3

Check the label: a calcium-fortified plant yogurt holds iron back just like dairy.

Drink water with it. Have coffee or tea 1 hour before or 2 hours after, as they hold plant iron back.
