Steak with spinach in coconut cream and strawberries

Why it works for iron

Creamed spinach usually means dairy cream, which brings calcium to the plate. Coconut cream gives the same comfort without it, and the strawberries and pepper add vitamin C.

Plant iron needs a key to get in. On this plate it has one.

Ingredients

  • 150 g beef steak
  • 150 g spinach
  • ½ red bell pepper
  • 4 tbsp thick coconut cream
  • 1 garlic clove, chilli flakes
  • A handful of strawberries

Method

  1. 1

Sear the steak to your liking and let it rest.

  2. 2

Warm the garlic and chilli in a little oil, add the diced pepper and the spinach and cover for 2 minutes.

  3. 3

Stir in the coconut cream, bring to a boil and take off the heat. Serve with the steak, and the strawberries to finish.

Drink water with it. Have coffee or tea 1 hour before or 2 hours after, as they hold plant iron back.
