Prawns with chickpeas, tomato and spinach

Why it works for iron

Chickpeas and spinach carry most of the iron, and the prawns add heme iron that helps it in. Tomato and lemon bring vitamin C, and it all cooks in the time pasta takes.

Plant iron needs a key to get in. On this plate it has one.

Ingredients

  • 150 g prawns
  • 150 g cooked chickpeas
  • 1 tomato
  • 100 g spinach
  • Garlic, paprika, lemon

Method

  1. 1

Fry the garlic and paprika in a little oil. Add the diced tomato and chickpeas and simmer 5 minutes.

  2. 2

Add the prawns for 3 minutes, until pink.

  3. 3

Stir in the spinach until it wilts. Finish with lemon.

Drink water with it. Have coffee or tea 1 hour before or 2 hours after, as they hold plant iron back.
