Salmon on lentils with parsley sauce

Why it works for iron

Salmon has less iron than red meat, but its heme iron helps the lentils' plant iron in. Parsley and lemon in the sauce, and tomato beside it, bring the keys.

Plant iron needs a key to get in. On this plate it has one.

Ingredients

  • 150 g salmon
  • 150 g cooked lentils
  • 1 tomato
  • A bunch of parsley
  • 1 lemon, 1 tbsp olive oil

Method

  1. 1

Bake the salmon at 200 °C for 12 minutes.

  2. 2

Warm the lentils with the diced tomato and a pinch of salt.

  3. 3

Chop the parsley fine with the oil and lemon juice and spoon it over everything. Salmon is light on iron, so the lentils carry this plate.

Drink water with it. Have coffee or tea 1 hour before or 2 hours after, as they hold plant iron back.
