Steak salad with roasted pepper and lime

Why it works for iron

Heme iron from steak gets in easily on its own. Pepper, tomato and lime add vitamin C for the plant iron in the leaves, and the whole thing takes a quarter of an hour.

Heme iron, from meat and fish, gets in on its own and helps the plant iron beside it in too.

Ingredients

  • 150 g beef steak
  • 1 red bell pepper
  • 1 tomato
  • 2 handfuls of rocket
  • 1 lime, 2 tsp olive oil

Method

  1. 1

Sear the steak 3 minutes a side and let it rest for 5 minutes.

  2. 2

Pan-roast the pepper strips until soft and charred at the edges.

  3. 3

Slice the steak over the rocket, tomato and pepper. Dress with lime and oil.

Drink water with it. Have coffee or tea 1 hour before or 2 hours after, as they hold plant iron back.
