Why it works for iron
Dried split peas cost little and keep for months. Soaking them overnight cuts their phytates, and carrot, parsley and lemon bring the keys for their plant iron.

Plant iron needs a key to get in. On this plate it has one.
Ingredients
- 100 g dry split peas, soaked overnight
- 500 mL bone broth or vegetable stock
- 1 carrot
- 1 small onion
- A bunch of parsley, ½ lemon
- 1 tbsp pumpkin seeds
Method
- 1
Simmer the soaked peas in fresh water until nearly soft, about 40 minutes, and drain.
- 2
Add them to the hot broth with the diced carrot and onion and cook 20 minutes, until they start to fall apart. Blend half for a thick soup.
- 3
Serve with parsley, a squeeze of lemon and toasted pumpkin seeds.
Drink water with it. Have coffee or tea 1 hour before or 2 hours after, as they hold plant iron back.
