Why it works for iron
Pho is a good way to eat beef when you do not feel like a steak. The heme iron gets in on its own, and fresh herbs and lime keep the broth bright.

Heme iron, from meat and fish, gets in on its own and helps the plant iron beside it in too.
Ingredients
- 120 g beef sirloin, sliced very thin
- 400 mL beef bone broth
- 50 g dry rice noodles
- A handful of Thai basil or coriander
- 1 lime, 1 spring onion, fresh chilli
- Star anise, cinnamon, ginger, fish sauce
Method
- 1
Simmer the broth with the star anise, cinnamon and sliced ginger for 15 minutes. Season with fish sauce.
- 2
Soak or boil the noodles and put them in a deep bowl with the raw beef on top.
- 3
Ladle the boiling broth over the beef, which cooks in seconds. Finish with the herbs, spring onion, chilli and lime.
Drink water with it. Have coffee or tea 1 hour before or 2 hours after, as they hold plant iron back.
