Quick-fried liver with pepper, rocket and lime

Why it works for iron

The trick with liver is to cut it thin and cook it fast, so it stays tender. Raw pepper and lime alongside are sharp and fresh, and they bring vitamin C.

Heme iron, from meat and fish, gets in on its own and helps the plant iron beside it in too.

Ingredients

  • 100 g beef or calf's liver
  • 1 red bell pepper
  • A handful of rocket
  • 1 lime
  • 1 tsp butter or olive oil, salt

Method

  1. 1

Cut the liver into thin strips and pat dry.

  2. 2

Fry fast in the hot fat, about 1 minute a side, so it stays pink inside. Salt at the end.

  3. 3

Serve at once with raw pepper strips, rocket and lime.

Drink water with it. Have coffee or tea 1 hour before or 2 hours after, as they hold plant iron back.

Pregnant or planning to be? Ask your doctor or midwife before eating liver or pâté. Both are very high in vitamin A.

Iron is an estimate from food tables for the amounts in this recipe, not a lab result. Your body takes in a share of it, and a larger share when your stores are low.
