Liver stroganoff with mushrooms on buckwheat

Why it works for iron

Stroganoff usually means sour cream, which brings calcium. Coconut cream with tomato paste and paprika keeps the sauce rich without it, and buckwheat adds plant iron of its own.

Heme iron, from meat and fish, gets in on its own and helps the plant iron beside it in too.

Ingredients

  • 100 g beef or calf's liver
  • 100 g mushrooms
  • 4 tbsp thick coconut cream
  • 50 g dry buckwheat
  • 1 tbsp tomato paste, 1 tsp paprika
  • 1 small onion, 1 tsp butter, parsley

Method

  1. 1

Boil the buckwheat for 15 minutes. Cut the liver into thin strips.

  2. 2

Soften the onion and mushrooms in the butter. Push them aside and fry the liver fast, 1–2 minutes, so it stays pink.

  3. 3

Stir in the tomato paste, paprika and coconut cream and bring just to a boil. Serve on the buckwheat with parsley. The coconut cream stands in for sour cream.

Drink water with it. Have coffee or tea 1 hour before or 2 hours after, as they hold plant iron back.

Pregnant or planning to be? Ask your doctor or midwife before eating liver or pâté. Both are very high in vitamin A.
