Heme iron, from meat and fish, gets in on its own and helps the plant iron beside it in too.

Ingredients

  • 250 g beef liver
  • 1 egg
  • 1 onion
  • 2 tbsp buckwheat or rice flour
  • 2 tomatoes, a little dill
  • Salt, black pepper, oil for frying

Method

  1. 1

Blend the liver, onion and egg into a smooth batter. Stir in the flour, salt and pepper.

  2. 2

Fry spoonfuls in a little oil, about 2 minutes a side, like small pancakes.

  3. 3

Serve warm with sliced tomatoes and dill. Cold the next day, they make a good lunch box.

Drink water with it. Have coffee or tea 1 hour before or 2 hours after, as they hold plant iron back.

Pregnant or planning to be? Ask your doctor or midwife before eating liver or pâté. Both are very high in vitamin A.
