Pâté on sourdough with pomegranate

Why it works for iron

A spoon of liver pâté is one of the quickest ways to eat liver. Pomegranate and red pepper bring vitamin C, and sourdough lets more of the iron through than wholegrain bread.

Heme iron, from meat and fish, gets in on its own and helps the plant iron beside it in too.

Ingredients

  • 2 tbsp homemade liver pâté
  • 2 slices sourdough bread
  • ½ red bell pepper
  • 2 tbsp pomegranate seeds

Method

  1. 1

Toast the sourdough. Long fermentation breaks down phytates, so it lets more iron through than wholegrain bread.

  2. 2

Spread with the pâté and scatter over the pomegranate.

  3. 3

Eat with the pepper in strips on the side.

Drink water with it. Have coffee or tea 1 hour before or 2 hours after, as they hold plant iron back.

Pregnant or planning to be? Ask your doctor or midwife before eating liver or pâté. Both are very high in vitamin A.

Iron is an estimate from food tables for the amounts in this recipe, not a lab result. Your body takes in a share of it, and a larger share when your stores are low.
