Beef and broccoli stir-fry with ginger and cashews

Why it works for iron

Broccoli is rich in vitamin C and beef brings heme iron, so the two help each other. Fish sauce and lime season it, and cashews add a little more iron.

Heme iron, from meat and fish, gets in on its own and helps the plant iron beside it in too.

Ingredients

  • 150 g beef steak, in thin strips
  • 150 g broccoli
  • 2 tbsp cashews
  • 40 g dry rice
  • Ginger, garlic, chilli
  • 1 tbsp fish sauce, ½ lime

Method

  1. 1

Cook the rice. Toast the cashews in a dry wok and set them aside.

  2. 2

Stir-fry the beef in a very hot wok for 2 minutes and take it out. Add the broccoli, ginger, garlic and a splash of water and cook 3 minutes.

  3. 3

Return the beef with the fish sauce and lime, toss and top with the cashews.

Drink water with it. Have coffee or tea 1 hour before or 2 hours after, as they hold plant iron back.
