Lazy cabbage rolls with beef and sauerkraut

Why it works for iron

Everything in a cabbage roll, in one pot. Sauerkraut and tomato bring vitamin C, carrot adds carotenoids, and the beef's heme iron helps the rest in.

Plant iron needs a key to get in. On this plate it has one.

Ingredients

  • 125 g beef mince
  • 100 g sauerkraut, rinsed if very sour
  • 30 g dry rice
  • 2 tbsp tomato paste
  • 1 small onion, 1 carrot
  • Paprika, bay leaf, dill

Method

  1. 1

Brown the mince with the chopped onion and grated carrot.

  2. 2

Add the sauerkraut, rice, tomato paste, paprika, bay leaf and 200 mL water. Cover and simmer 20 minutes, until the rice is soft.

  3. 3

Finish with dill. It tastes even better the next day.

Drink water with it. Have coffee or tea 1 hour before or 2 hours after, as they hold plant iron back.
