Beef keema with spinach

Why it works for iron

Keema is a quick mince curry, and a big handful of spinach turns it into an iron meal. Beef brings heme iron, and tomato and lemon bring vitamin C for the spinach.

Plant iron needs a key to get in. On this plate it has one.

Ingredients

  • 125 g beef mince
  • 150 g spinach
  • 1 tomato
  • 1 small onion
  • Ginger, garlic, garam masala, turmeric, chilli
  • ½ lemon

Method

  1. 1

Soften the onion, ginger and garlic in a little oil. Add the spices for 30 seconds.

  2. 2

Brown the mince, add the chopped tomato and simmer 10 minutes.

  3. 3

Stir in the spinach until it wilts and finish with lemon. Leave out the raita: it is yogurt.

Drink water with it. Have coffee or tea 1 hour before or 2 hours after, as they hold plant iron back.
